Do you think I could live off of this smoothie healthily?

You DO need protein, and you are not going to get it eating that way. You need to eat more things like soy and beans for starters. And no, the soy milk is not enough for your daily protein intake. Without the proper amount of protein, your body will start to react in all sorts of fun ways like hairloss, btw. Skipping meals is a bad idea. You will actually keep up your metabolism and be healthier overall if you eat multiple (six is the number I hear most often) small meals a day. And no, you cannot live off of the smoothie and muffins and crackers. You will be seriously depriving your body of nutrients that you need. And no, I am not telling you to eat meat. You can get all you need without it, but first, you need to actually eat. What you are proposing is not eating.
